Ingredients

Scale

Base Ingredients

  • 4 large fresh eggs
  • 1 cup full-fat cottage cheese
  • 1/4 cup milk or cream
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon butter or olive oil (for greasing)

Optional Add-ins

  • 2 tablespoons chopped fresh herbs (parsley, chives, or dill)
  • 1/4 cup sautéed spinach, diced tomatoes, or bell peppers
  • 1 small jalapeño, diced (for a spicy kick)
  • 1/4 cup shredded cheese (mozzarella, cheddar, or feta)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly grease your baking dish with butter or olive oil to prevent sticking and to add richness to the edges as the eggs bake.
  2. Mix the Ingredients: In a mixing bowl, combine the eggs, cottage cheese, and milk or cream. Season with salt and pepper. Gently whisk until the mixture is smooth but still retains some texture from the cottage cheese curds.
  3. Add Fresh Herbs (Optional): Stir in chopped fresh herbs such as parsley or chives to add flavor and color.
  4. Pour and Bake: Pour the mixture evenly into the prepared baking dish. Place it in the oven and bake for 25-30 minutes, or until the eggs are set and the top is lightly golden. Start checking at 20 minutes to avoid overcooking.
  5. Cool and Serve: Let the dish cool for a few minutes after baking to firm up the eggs for easier slicing. Serve warm with your favorite sides or garnishes.

Notes

  • Use full-fat cottage cheese for a richer, creamier texture.
  • Don’t overmix; keep some curds visible to maintain a pleasant texture.
  • Check doneness around 20 minutes to prevent dryness.
  • For a golden crust, sprinkle extra shredded cheese on top during the last 5 minutes of baking.
  • Use a glass or ceramic baking dish for even cooking and easy cleaning.
