Ingredients

Scale

Fruit Topping

  • 34 ripe peaches, sliced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Crust

  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons melted butter

Filling

  • 24 oz (3 packages) cream cheese, softened
  • 3/4 cup sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or heavy cream

Instructions

  1. Prepare the Crust: Crush graham crackers into fine crumbs and mix thoroughly with melted butter. Press this mixture firmly into the bottom of a springform pan to create an even layer. Chill in the refrigerator while preparing the filling to help it firm up.
  2. Make the Cream Cheese Filling: In a large bowl, beat the cream cheese until completely smooth. Gradually add sugar, mixing until creamy and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and sour cream or heavy cream to achieve a silky texture that will bake perfectly.
  3. Assemble and Bake: Pour the cream cheese filling over the chilled crust and smooth the top evenly. Bake in a preheated oven at 325°F (160°C) for 50-60 minutes, or until the edges are set and the center still has a slight wobble. Be careful not to overbake to maintain a creamy interior.
  4. Prepare the Fruit Topping: While the cheesecake cools, slice peaches and combine with mixed berries. Toss gently with lemon juice and zest to enhance flavor and prevent browning. Let the fruit mixture sit for 10 minutes to blend the flavors.
  5. Chill and Serve: After the cheesecake reaches room temperature, evenly spread the berry and peach topping on top. Refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld and the cheesecake to fully set before serving.

Notes

  • Use room temperature cream cheese and eggs to avoid lumps in the filling.
  • Do not overmix the filling to prevent cracks from excess air.
  • Consider baking the cheesecake in a water bath to ensure a smooth, crack-free surface.
  • Chill the cheesecake thoroughly, ideally overnight, for best texture and flavor.
  • Add the fresh fruit topping just before serving to keep the fruit fresh and vibrant.
