Ingredients

Scale

Main Ingredients

  • 1 1/2 cups Biscoff cookies, ground into fine crumbs
  • 8 ounces cream cheese, softened (or vegan cream cheese for vegan version)
  • 1/2 cup powdered sugar
  • 8 ounces dark or milk chocolate, for coating (use dairy-free chocolate for vegan version)

Optional Toppings

  • Crushed nuts (toasted pecans or hazelnuts)
  • Extra Biscoff cookie crumbs
  • Flaky sea salt

Optional Flavor Add-ins

  • Pinch of cinnamon or cardamom
  • White chocolate (for swirl effect in coating)

Instructions

  1. Prepare the Biscoff Crumbs: Place the Biscoff cookies in a food processor and pulse until they become fine crumbs. This will form the flavorful, textured base of your truffles.
  2. Mix the Filling: In a bowl, combine the Biscoff crumbs with softened cream cheese and powdered sugar. Mix thoroughly until the mixture is smooth and well-bound, holding together easily when shaped.
  3. Shape the Truffles: Using your hands or a small scoop, form the mixture into bite-sized balls about one inch in diameter. Place them on parchment-lined baking sheets and chill in the refrigerator for at least 30 minutes to firm up.
  4. Melt the Chocolate: While the truffles chill, gently melt your choice of chocolate in a microwave or double boiler until smooth and glossy.
  5. Coat the Bites: Dip each chilled truffle into the melted chocolate, ensuring full coverage. Lift them out with a fork, letting excess chocolate drip off, then place them back on the parchment paper.
  6. Add Finishing Touches: If desired, sprinkle toppings such as crushed nuts, extra cookie crumbs, or flaky sea salt over the chocolate before it sets. Allow the coated truffles to cool completely at room temperature or in the refrigerator until firm.

Notes

  • Use room temperature cream cheese for smooth blending without lumps.
  • Mix just until combined to keep the filling texture delicate.
  • Chill the truffles well before dipping to ensure a clean chocolate coating.
  • Temper the chocolate if possible for a shiny, crisp shell.
  • Store the truffles in an airtight container to keep fresh and prevent fridge odors.
