Scale

Main Ingredients

  • 46 Black Garlic Cloves, peeled
  • 200g Ramen Noodles (fresh or dried)
  • 4 cups Chicken or Vegetable Broth
  • 2 tbsp Soy Sauce
  • 1 tbsp Sesame Oil
  • 34 Scallions, sliced
  • 1 cup Mushrooms, sliced
  • 2 Soft-Boiled Eggs, halved

Instructions

  1. Prepare the Broth: Gently simmer chicken or vegetable broth with black garlic cloves, soy sauce, and a splash of sesame oil. Cook slowly to let the black garlic infuse the broth with its rich, caramelized flavor.
  2. Cook the Noodles: While the broth simmers, cook ramen noodles according to package instructions until tender but still springy. Drain and set aside to prevent overcooking.
  3. Sauté Mushrooms and Scallions: In a separate pan, sauté sliced mushrooms and scallions in a little sesame oil until tender and fragrant. Add them to the simmering broth for an extra layer of umami.
  4. Prepare Soft-Boiled Eggs: Boil eggs for about six minutes to achieve silky soft yolks. Peel carefully and slice in half to place atop each bowl.
  5. Assemble the Bowl: Place cooked noodles in serving bowls, ladle hot black garlic broth with mushrooms and scallions over them, then garnish with soft-boiled eggs and additional black garlic cloves if desired.

Notes

  • Use fresh black garlic cloves for best flavor.
  • Do not overcook noodles; keep them springy.
  • Simmer broth on low heat to prevent bitterness.
  • Toast sesame seeds to add aroma and crunch.
  • Add personal toppings last for freshness and texture contrast.
