  • 1 egg or 2 tablespoons water (for sealing)

Filling

  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh blueberries

Instructions

  1. Prepare the Cream Cheese Filling: In a mixing bowl, combine softened cream cheese, sugar, lemon zest, and vanilla extract. Stir until smooth and creamy, then gently fold in the fresh blueberries, being careful not to crush them.
  2. Lay Out the Egg Roll Wrappers: Place one egg roll wrapper on a flat surface so that it looks like a diamond shape. Make sure your workspace is clean and dry to prevent the wrappers from sticking.
  3. Fill and Roll: Spoon about 2 tablespoons of the blueberry cream cheese filling into the center of the wrapper. Fold the bottom corner over the filling, then fold the side corners toward the center. Brush the top corner with beaten egg or water and roll tightly to seal the egg roll completely.
  4. Fry the Egg Rolls: Heat oil in a deep skillet or fryer to 350°F (175°C). Carefully place the egg rolls in the hot oil, frying a few at a time to avoid overcrowding. Cook each side until golden brown and crisp, about 2 to 3 minutes per side.
  5. Drain and Serve: Remove the egg rolls using a slotted spoon and place them on paper towels to drain excess oil. Serve warm to enjoy the crispiness and melty creamy filling at its best.
