Ingredients

Scale

Chicken & Sauce

  • 1 lb chicken breast or thighs, seasoned with salt and pepper
  • 3/4 cup Buffalo sauce (store-bought or homemade)

Taco Shells & Toppings

  • 8 hard crispy taco shells
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup sliced green onions
  • 1/3 cup ranch or blue cheese dressing

Optional Garnishes

  • Celery sticks, diced tomatoes, or avocado (to taste)
  • Chopped cilantro
  • Sliced jalapeños
  • Lime wedges (for squeezing)

Instructions

  1. Prepare the Chicken: Cook chicken breasts or thighs seasoned with salt and pepper by pan-searing or baking until fully cooked and tender. Once cooked, shred the chicken finely with two forks for an ideal taco texture.
  2. Toss in Buffalo Sauce: Place the shredded chicken in a bowl and coat it evenly with Buffalo sauce, mixing thoroughly to ensure every bite delivers that spicy, tangy flavor.
  3. Warm the Taco Shells: Preheat oven to 375°F (190°C). Arrange the hard taco shells on a baking sheet and warm them for 5–7 minutes to enhance their crunch and prevent breakage when filling.
  4. Assemble the Tacos: Spoon a generous amount of Buffalo chicken into each warmed taco shell. Top with shredded lettuce, shredded cheese, and green onions. Drizzle ranch or blue cheese dressing over the top to balance the heat.
  5. Add Final Touches: Garnish tacos with optional toppings like diced tomatoes, celery sticks, sliced jalapeños, or avocado. Serve immediately to enjoy the contrast of crispy shells and tender filling.

Notes

  • Use cold or leftover chicken to absorb Buffalo sauce better.
  • Don’t overload shells to keep tacos easy to handle.
  • Add shredded lettuce and green onions just before serving to maintain freshness and crunch.
  • Make homemade Buffalo sauce by combining hot sauce and melted butter for fresher flavor.
  • Serve ranch or blue cheese dressing on the side for dipping as well as drizzling.
