Ingredients

Scale

Filling

  • 2 cups cooked shredded chicken breast or thighs
  • 1/2 cup buffalo sauce (adjust to taste)
  • 4 oz softened cream cheese
  • 1/4 cup finely chopped green onions
  • 1/2 cup shredded cheddar cheese

Others

  • 1012 egg roll wrappers
  • Oil for frying (canola or vegetable oil, high smoke point)
  • Water or beaten egg (for sealing wrappers)

Optional Dipping Sauce

  • Ranch dressing
  • Blue cheese dressing

Instructions

  1. Prepare the Buffalo Chicken Filling: Shred cooked chicken finely, then toss it with buffalo sauce and softened cream cheese until smooth and creamy. Stir in the chopped green onions and shredded cheddar cheese to combine flavors and textures well.
  2. Assemble the Egg Rolls: Place an egg roll wrapper flat on a clean surface. Spoon a generous amount of filling onto the center. Fold the bottom corner up over the filling, fold in the sides tightly, and roll toward the top corner. Seal the edges using a little water or beaten egg to prevent them from opening during cooking.
  3. Cook the Egg Rolls: Heat oil in a deep skillet or pan to about 350°F (175°C). Carefully place the egg rolls seam side down in the hot oil. Fry for 2-3 minutes on each side or until golden brown and crisp. Remove and drain on paper towels to absorb excess oil.
  4. Serve Warm: Serve immediately with your choice of dipping sauces like ranch or blue cheese dressing to complement the spicy, crispy egg rolls.

Notes

  • Use room temperature softened cream cheese for smooth blending with filling ingredients.
  • Do not overfill the egg roll wrappers to avoid bursting while frying.
  • Seal the egg rolls properly with water or egg wash to keep them closed during cooking.
  • Maintain consistent oil temperature to ensure an even, crispy texture and prevent greasiness.
  • Drain fried egg rolls well on paper towels to keep them crisp.
