Ingredients

Scale

Vegetables

  • 34 Yukon Gold or Russet potatoes, peeled and cubed
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • Green onions or chives, chopped (for garnish)

Liquids & Dairy

  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or milk

Seasonings & Fats

  • 2 tablespoons butter or olive oil
  • 2 teaspoons Cajun seasoning (adjust to taste)
  • Salt and pepper to taste

Optional Ingredients

  • Bacon, cooked and crumbled (for garnish)
  • Smoked paprika (for extra smokiness)
  • Shredded sharp cheddar or pepper jack cheese (for cheesy variation)
  • Fresh chopped jalapeños (for extra heat)
  • Cooked sausage, shredded chicken, or shrimp (for added protein)

Instructions

  1. Prep and Sauté Your Base: Dice the onion, celery, and bell pepper finely. In a large pot, heat butter or olive oil over medium heat. Add diced vegetables and sauté for about 5 minutes until softened and fragrant. Stir in minced garlic and cook for another minute to release its aroma.
  2. Add Potatoes and Seasoning: Peel and cube the potatoes into bite-sized pieces, then add them to the pot. Sprinkle the Cajun seasoning over the vegetables and potatoes, stirring well to evenly coat all ingredients. This forms the flavorful base of the soup.
  3. Pour in Broth and Simmer: Pour in chicken or vegetable broth just enough to cover the potatoes. Bring to a boil, then reduce heat and simmer gently for about 15 minutes, or until potatoes are tender and easily pierced with a fork.
  4. Blend the Soup (Optional): For a creamy texture, partially blend the soup using an immersion blender directly in the pot. For a chunkier soup, skip blending or only pulse a few times to retain some potato pieces.
  5. Add Cream and Final Seasoning: Lower the heat, then slowly stir in heavy cream or milk, avoiding curdling. Taste and adjust seasoning with salt, pepper, or additional Cajun spice if desired. Warm gently without boiling to keep the cream smooth.
  6. Garnish and Serve: Ladle soup into bowls. Top with chopped green onions or chives and sprinkle crispy bacon bits if using. Optionally, add a pinch of smoked paprika for extra flavor and color. Serve warm with your favorite sides.

Notes

  • Fresh is Best: Use fresh vegetables and homemade Cajun seasoning for maximum flavor.
  • Don’t Overblend: Keep some chunkiness for texture; fully smooth soup may feel less hearty.
  • Control the Heat: Add Cajun seasoning gradually to manage spiciness.
  • Potato Choice: Yukon Gold potatoes provide creamy texture and subtle sweetness; Russets will yield a softer soup.
  • Sauce Creaminess: Use cream or whole milk for richness; half-and-half can lighten calories.
  • Make It Smoky: Add smoked paprika or liquid smoke for deeper smoky notes.
  • Simmer Gently: Keep a low simmer to blend flavors and prevent dairy from breaking.
