Instructions

  1. Prepare the Cauliflower: Rinse the cauliflower and chop into florets. Pulse in a food processor or finely grate until the texture resembles rice. Steam or microwave until tender but not mushy. Allow it to cool, then squeeze out excess moisture using a clean kitchen towel to ensure crisp patties.
  2. Mix the Ingredients: In a large mixing bowl, combine the cooled cauliflower rice, shredded cheddar and mozzarella cheese, breadcrumbs, eggs, garlic powder, onion powder, chopped parsley, salt, and pepper. Stir well until the mixture becomes sticky and holds together when pressed.
  3. Shape the Patties: Using your hands, form the mixture into small patties about 2-3 inches in diameter and not too thick. Place them evenly spaced on a baking sheet lined with parchment paper.
  4. Cook Until Golden: Heat olive oil or butter in a large skillet over medium heat. Add patties carefully and cook for 3-4 minutes per side until golden and crispy. Alternatively, bake at 400°F (200°C) for 15-20 minutes, flipping halfway through to brown evenly.
