Ingredients

Scale

Vegetables

  • 1 medium-sized firm cauliflower head

Seasonings

  • Olive oil (about 2-3 tablespoons)
  • Garlic powder, to taste (about 1 teaspoon)
  • Salt, to taste (about 1/2 teaspoon)
  • Black pepper, to taste (about 1/4 teaspoon)

Cheeses

  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

Optional Garnishes

  • Fresh parsley or chives, chopped (about 1-2 tablespoons)

Instructions

  1. Prepare the Cauliflower: Remove the outer green leaves and trim the stem end of the cauliflower. Stand it upright and carefully slice it into 3/4-inch thick steaks, ensuring they remain intact for cooking.
  2. Season the Steaks: Brush both sides of each cauliflower steak evenly with olive oil. Sprinkle garlic powder, salt, and pepper over each steak to season thoroughly for balanced flavor.
  3. Roast the Cauliflower: Arrange the steaks on a baking sheet lined with parchment paper, leaving space between each for even cooking. Roast in a preheated oven at 425°F (220°C) for 20 minutes, until tender and starting to brown on the edges.
  4. Add the Cheese: Remove the steaks from the oven and generously sprinkle the shredded cheddar and mozzarella cheeses over each steak, then dust with Parmesan cheese. Return the baking sheet to the oven and bake for an additional 5-7 minutes until the cheese is melted, bubbly, and slightly golden.
  5. Garnish and Serve: Once out of the oven, sprinkle chopped fresh parsley or chives over the cauliflower steaks for a burst of color and freshness. Serve immediately to enjoy the best texture and flavor.

Notes

  • Choose a dense and firm cauliflower to ensure the steaks hold together well.
  • Using a sharp knife will help cut clean, intact slices without breaking the steaks.
  • Do not overcrowd the baking sheet; spacing the steaks apart allows even roasting and crisp edges.
  • Feel free to experiment with cheese blends for added flavor complexity.
  • Keep a close eye during the final cheese-melting step to prevent burning.
