Ingredients

Scale

Potatoes

  • 45 medium Russet or Yukon Gold potatoes, peeled and sliced 1/8-inch thick

Cheese Blend

  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded

Fresh Herbs

  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh rosemary, finely chopped

Cream Sauce

  • 2 cups heavy cream or half-and-half
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste

Other

  • 2 tbsp unsalted butter (for greasing and topping)

Instructions

  1. Prepare the Potatoes: Peel and slice your potatoes into thin, even rounds about 1/8-inch thick to ensure they cook uniformly and absorb the cheese and herb flavors beautifully.
  2. Make the Herb-Infused Cream Sauce: Gently warm the heavy cream with fresh herbs (parsley, thyme, rosemary) and minced garlic over low heat, allowing the flavors to meld and infuse for a few minutes. Season with salt and pepper to taste, then remove from heat and mix in half of the shredded cheeses to create a rich, velvety sauce.
  3. Layer the Potatoes and Cheese: Butter a baking dish thoroughly. Arrange a layer of potato slices on the bottom, then spoon over some of the creamy herb sauce and sprinkle a portion of the remaining cheese blend on top. Repeat these layers until all potatoes, sauce, and cheese are used, finishing with cheese on the top layer.
  4. Bake Until Golden and Bubbly: Preheat your oven to 350°F (175°C). Bake the casserole for 50-60 minutes, or until the top is golden brown and crisp, and the potatoes are tender when pierced with a fork.
  5. Rest and Serve: Remove the bake from the oven and let it rest for 10 minutes. This allows the layers to set, making it easier to serve and enhancing the flavors. Garnish with extra fresh parsley or chives and a light crack of black pepper before serving.

Notes

  • Slice potatoes thinly and evenly for best texture and uniform cooking.
  • Use fresh herbs for the most vibrant, aromatic flavor.
  • Allow the bake to rest for at least 10 minutes after baking to firm up.
  • Butter the baking dish to prevent sticking and add a crispy bottom layer.
  • Choose a combination of cheeses that melt well and add flavor for maximum deliciousness.
