Ingredients

Scale

Proteins

  • 8 oz thinly sliced beef or steak strips
  • Optionally, 8 oz thinly sliced chicken breast as a substitute

Pasta

  • 1 package (about 9-12 oz) cheese tortellini (fresh or frozen)

Vegetables

  • 1 cup diced bell peppers (red and green)
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Dairy

  • 1 cup shredded mozzarella cheese
  • 1 cup shredded provolone or American cheese
  • 1 cup heavy cream or half-and-half
  • 1 tablespoon butter

Oils and Seasonings

  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Prepare the Ingredients: Thinly slice the beef or your choice of protein. Dice the bell peppers and onion, and mince the garlic. Cook the tortellini according to package instructions until al dente. Drain and set aside.
  2. Sauté the Vegetables and Beef: Heat butter and olive oil in a large skillet over medium-high heat. Add diced onions and bell peppers; cook for about 4-5 minutes until softened. Push the veggies to the side and add the sliced beef, seasoning with salt, pepper, and Italian seasoning. Cook until the beef is browned and cooked through.
  3. Make the Cheese Sauce: Reduce heat to medium. Add minced garlic to the skillet and cook briefly until fragrant. Pour in the heavy cream and stir to combine with beef and vegetables. Gradually add shredded mozzarella and provolone cheeses, stirring constantly until melted and smooth. Adjust seasoning as needed.
  4. Combine with Tortellini: Add the cooked tortellini to the skillet and gently toss to coat the pasta evenly with the cheesy Philly cheesesteak mixture, ensuring every piece is covered with sauce, beef, and veggies.
  5. Serve Warm: Plate the tortellini immediately to enjoy the cheese at its meltiest and beef tender and juicy. Garnish as desired with fresh parsley or green onions.

Notes

  • Use fresh tortellini for faster cooking and better sauce absorption.
  • Do not overcook the beef; sear just until browned to keep it tender and juicy.
  • Add cheese slowly to prevent clumping and achieve a silky smooth sauce.
  • Add a splash of beef or chicken broth if sauce becomes too thick.
  • Let the dish rest for a minute before serving to meld flavors.
