Ingredients

Scale

Potatoes & Sausage

  • 4 cups bite-sized red or Yukon gold potatoes
  • 12 oz fully cooked smoked or Italian sausage, sliced into rounds

Seasonings & Oil

  • 2 tablespoons olive oil
  • 2 tablespoons ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Cheese & Garnish

  • 1 ½ cups shredded sharp cheddar cheese or cheddar-mozzarella blend
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the potatoes and sausage: Preheat your oven to 400°F (200°C). Wash and dice the potatoes into bite-sized chunks, then slice the fully cooked sausage into rounds or bite-sized pieces to ensure even cooking.
  2. Season the ingredients: In a large bowl, toss the potatoes and sausage with olive oil, ranch seasoning mix, garlic powder, onion powder, salt, and pepper until everything is evenly coated with flavor.
  3. Assemble in a baking dish: Transfer the seasoned potatoes and sausage to a greased 9×13-inch baking dish, spreading the mixture out evenly to allow the potatoes to crisp while roasting.
  4. Bake until golden and tender: Bake uncovered for about 30-35 minutes, stirring halfway through to brown the potatoes on multiple sides and ensure the sausage heats through evenly.
  5. Add cheese and finish baking: Sprinkle shredded cheese evenly over the hot potato and sausage mixture, then return to the oven for another 5-7 minutes until the cheese melts and bubbles.
  6. Garnish and serve: Remove from the oven and garnish with freshly chopped parsley or green onions for color and fresh flavor. Serve warm.

Notes

  • Cut potatoes uniformly to ensure even cooking and crispiness.
  • Use a wire rack in the baking dish for better air circulation and crispier edges.
  • Do not overcrowd the pan to prevent steaming; give ingredients space to roast.
  • Let the bake rest for a few minutes after cooking to set and thicken.
  • This recipe doubles well for larger groups.
