Ingredients

Scale

Main Ingredients

  • 4 cups Yukon Gold or red potatoes, thinly sliced
  • 3 cups cooked chicken, shredded or diced
  • 1 cup cooked bacon bits
  • 1 packet ranch dressing mix (approx. 1 oz)
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup milk or cream
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish to prevent sticking and promote even baking.
  2. Cook and Slice Potatoes: Wash and thinly slice the potatoes. Peeling is optional, but keeping skins adds texture and nutrients.
  3. Mix Creamy Sauce: In a large bowl, combine the ranch dressing mix, sour cream, milk or cream, minced garlic, salt, and pepper. Stir until well blended to form a creamy base.
  4. Layer Ingredients: Layer half of the sliced potatoes on the bottom of the baking dish. Add half of the shredded chicken and sprinkle half of the cooked bacon over the potatoes. Pour half of the ranch sauce over this layer. Repeat the layers with remaining potatoes, chicken, bacon, and ranch sauce. Top with shredded cheddar and mozzarella cheese.
  5. Bake to Perfection: Cover the baking dish tightly with foil and bake for 45 minutes. Remove the foil, sprinkle extra cheese on top if desired, then bake uncovered for an additional 10-15 minutes until the top is bubbly and golden brown.
  6. Let it Rest: Remove from oven and allow the bake to rest for 5-10 minutes so the sauce thickens and flavors meld before serving.

Notes

  • Slice potatoes evenly using a mandoline or sharp knife for consistent cooking.
  • Avoid overcrowding the dish to allow heat circulation and prevent soggy layers.
  • Day-old bacon crisps up better and adds more flavor than freshly cooked bacon.
  • Combine cheddar with mozzarella for a flavorful cheese blend and great melting texture.
  • Mix ranch seasoning into wet ingredients first for even flavor distribution.
