Instructions

  1. Prepare the Chicken: Season the chicken pieces generously with salt and pepper. Heat oil or lard in a heavy-bottomed pan over medium heat. Brown the chicken evenly on all sides for about 5-7 minutes. Remove the chicken from the pan and set aside.
  2. Sauté the Onions and Garlic: In the same pan, add the finely chopped onions and cook gently over medium heat until soft and translucent, about 8-10 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  3. Add Paprika and Flour: Remove the pan from heat. Stir in the sweet Hungarian paprika and flour thoroughly to coat the onions, preventing the paprika from burning and beginning to thicken the sauce base.
  4. Simmer the Chicken: Return the pan to medium heat and slowly pour in the chicken broth while stirring continuously to create a smooth sauce. Nestle the browned chicken pieces back into the pan. Cover and let simmer gently for 35-40 minutes until the chicken is tender and cooked through.
  5. Finish with Sour Cream: Turn off the heat and allow the chicken to cool slightly. Stir in the sour cream gently to prevent curdling, creating a creamy, velvety sauce. Adjust seasoning with salt and pepper as needed.
