  • 2 cups cooked chicken, shredded or diced
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup sautéed onions
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil or butter

Instructions

  1. Prepare the Filling: Heat a skillet over medium heat and sauté the onions and diced bell peppers until soft and fragrant. Add the cooked chicken along with cumin, chili powder, and garlic powder. Stir well to coat the chicken evenly and cook for 2-3 more minutes to combine flavors.
  2. Assemble the Quesadillas: Lay one flour tortilla flat on a clean surface. Sprinkle a generous layer of cheddar and Monterey Jack cheese over half the tortilla. Spoon the chicken and vegetable mixture evenly on top of the cheese. Add another layer of cheese on top of the filling. Fold the tortilla over carefully to form a half-moon shape.
  3. Cook Until Crispy: Heat a non-stick pan over medium heat and add a little olive oil or butter. Place the assembled quesadilla in the pan and cook for 3 to 4 minutes on each side, pressing gently with a spatula, until the tortilla is golden brown and cheese is melted inside.
  4. Slice and Serve: Remove the quesadilla from the skillet and place on a cutting board. Allow to rest for one minute, then slice into triangles. Serve warm with your favorite dips such as salsa, guacamole, or sour cream.
