Ingredients

Proteins & Dairy

  • Chicken sausage (pre-cooked or fresh) – about 8 oz
  • Large eggs – 4
  • Shredded cheese (cheddar or Mexican blend) – 1 to 1 ½ cups

Vegetables

  • Diced bell peppers – ½ cup
  • Diced onions – ½ cup

Other Ingredients

  • Large flour tortillas – 4
  • Olive oil or butter – 1 to 2 tbsp
  • Salt – to taste
  • Pepper – to taste
  • Salsa or hot sauce (optional) – to serve

Instructions

  1. Cook the sausage and vegetables: Heat a skillet over medium heat and add a splash of olive oil. Slice or crumble the chicken sausage and cook until browned and heated through. Toss in diced bell peppers and onions and sauté until softened and fragrant, about 3-4 minutes.
  2. Scramble the eggs: In a bowl, whisk the eggs with a pinch of salt and pepper. Push the sausage and vegetable mixture to the side of the skillet, pour in the eggs, and gently scramble until fully cooked but still moist and fluffy.
  3. Assemble the quesadilla: Lay a large flour tortilla flat on a clean surface. Sprinkle half with shredded cheese, then spread the sausage and egg mixture evenly over the cheese. Add another layer of cheese on top for the best melt, then fold the tortilla in half.
  4. Cook the quesadilla: Heat a clean skillet or griddle over medium heat and add butter or oil. Carefully place the folded tortilla in the pan and cook for 3-4 minutes on each side, or until the outside is golden brown and crispy and the cheese is melted inside.
  5. Serve and enjoy: Remove from heat, let cool slightly, then slice into wedges. Serve with salsa, sour cream, or hot sauce on the side for extra flavor.

Notes

  • Choose quality chicken sausage with herbs and spices to maximize flavor.
  • Don’t overfill the quesadilla to avoid soggy or hard-to-flip results.
  • Cook on medium heat to achieve crispy tortillas without burning.
  • Gently press the quesadilla with a spatula to help cheese melt evenly.
  • Let the quesadilla rest for a minute before slicing so the cheese sets, reducing mess.
