Ingredients

Scale

Dry Ingredients

  • 1 ¾ cups all-purpose flour
  • ¾ cup cocoa powder (preferably Dutch-processed)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 3 large eggs, room temperature
  • 1 cup buttermilk, room temperature
  • 2 teaspoons vanilla extract

Additional Ingredients

  • 1 cup semi-sweet chocolate chips or chunks

Fudge Frosting

  • ½ cup unsalted butter
  • 4 ounces semi-sweet or bittersweet chocolate, melted
  • 2 ½ cups powdered sugar
  • 2 tablespoons milk or cream

Instructions

  1. Prepare Your Ingredients: Preheat the oven to 350°F (175°C). Grease and flour two 8-inch or 9-inch round cake pans. Measure all ingredients accurately to ensure balanced batter.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt until evenly combined.
  3. Cream Butter and Sugars: Using an electric mixer, beat the softened unsalted butter with granulated sugar and brown sugar until the mixture is light, fluffy, and pale in color, incorporating air for a tender crumb.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then add the vanilla extract and mix until combined.
  5. Alternate Adding Dry Ingredients and Buttermilk: Add the dry ingredients and buttermilk in three parts, starting and ending with the dry mix. Gently fold and mix each addition until just combined to avoid overmixing.
  6. Fold in Chocolate Chips: Carefully fold in the semi-sweet chocolate chips or chunks to distribute them evenly throughout the batter.
  7. Bake to Perfection: Divide the batter evenly between the prepared pans. Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs attached.
  8. Prepare the Fudge Frosting: While the cakes cool, melt the butter and chocolate together. Let cool slightly, then beat in powdered sugar and milk or cream until the frosting is glossy and spreadable. Adjust consistency if needed.
  9. Assemble and Frost: Once the cakes are completely cooled, layer one cake on your serving plate, spread a portion of fudge frosting on top, place the second cake on top, and cover the entire cake generously with the remaining frosting for a decadent finish.

Notes

  • Use Dutch-processed cocoa powder for richer, smoother flavor.
  • Bring eggs, butter, and buttermilk to room temperature before mixing for best texture.
  • Mix batter only until ingredients are combined to prevent a tough cake.
  • Check oven temperature with a thermometer to ensure accurate baking.
  • Let cake layers cool completely before frosting to avoid melting the frosting.
