Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup granulated sugar (plus extra for cinnamon sugar coating)
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup cold unsalted butter, cut into small pieces
  • 3/4 cup milk or buttermilk
  • 1 teaspoon vanilla extract (optional)
  • 2 tablespoons melted butter (for brushing)

Cinnamon Sugar Coating

  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Mix the Dry Ingredients: Combine flour, baking powder, sugar, cinnamon, and salt in a large bowl, ensuring the cinnamon is evenly distributed throughout the mixture for consistent flavor.
  2. Cut in the Butter: Using a pastry cutter or your fingers, cut cold butter into the dry ingredients until the mixture resembles coarse crumbs with small pea-sized pieces.
  3. Add Milk and Stir Gently: Pour in your milk or buttermilk and vanilla extract, stirring just until the dough begins to come together. Don’t overmix to keep biscuits light and flaky.
  4. Shape and Coat: Turn the dough onto a floured surface and gently pat it into a rectangle. Brush the surface with melted butter, then sprinkle generously with cinnamon sugar.
  5. Cut and Bake: Cut the dough into biscuits using a biscuit cutter or knife, place them on a baking sheet, and bake in a preheated oven at 425°F (220°C) for 12–15 minutes until golden brown and fragrant.

Notes

  • Keep Butter Cold: Cold butter creates flaky layers by melting in the oven and releasing steam.
  • Don’t Overmix: Gently fold ingredients to keep the biscuits tender and light.
  • Use Fresh Cinnamon: Fresh ground cinnamon will give a more vibrant taste than pre-ground versions.
  • Brush with Butter: Brushing melted butter on top before adding cinnamon sugar ensures it sticks and crisps up nicely.
  • Bake Immediately: For best texture, bake your biscuits as soon as you cut them.
