Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups all-purpose flour (or gluten-free baking blend for gluten-free option)
  • 1 1/2 teaspoons baking powder
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Wet Ingredients

  • 2 large eggs
  • 1/4 cup unsalted butter, melted (or plant-based butter for vegan option)
  • 1 teaspoon vanilla extract

Filling

  • 8 oz cream cheese, softened (use vegan cream cheese if desired)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches, peeled and diced (can substitute nectarines, plums, or frozen berries)
  • 1 tablespoon granulated sugar (for peach filling)
  • 1/2 teaspoon ground cinnamon (for peach filling)
  • 1/4 teaspoon ground nutmeg (for peach filling)

Toppings (Optional)

  • Powdered sugar, for dusting
  • Lemon or brown sugar glaze, for drizzling
  • Extra cinnamon sugar, for sprinkling

Instructions

  1. Prepare Your Peach Filling: Peel and dice fresh peaches. Toss them with 1 tablespoon sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Simmer gently on the stove until the peaches are tender and fragrant. Set aside and let cool.
  2. Make the Cheesecake Filling: Beat softened cream cheese with 1/4 cup sugar and 1 teaspoon vanilla extract until smooth and creamy.
  3. Prepare the Donut Batter: In a large bowl, whisk together the flour, baking powder, 1/2 cup sugar, cinnamon, and nutmeg. In another bowl, combine eggs, melted butter, and vanilla extract. Gradually add wet ingredients to the dry and mix until smooth, being careful not to overmix.
  4. Assemble the Donuts: Grease a donut pan. Spoon a small amount of batter into each cavity, add a spoonful of cheesecake filling, then a spoon of the cooled peach mixture. Top with more batter to cover the fillings completely.
  5. Bake Until Golden: Bake in a preheated oven at 350°F (175°C) for 18-20 minutes, or until donuts spring back when touched and a toothpick inserted comes out clean. Allow them to cool before removing from the pan.
  6. Optional Toppings: Dust the cooled donuts with powdered sugar, drizzle with lemon or brown sugar glaze, or sprinkle with extra cinnamon sugar for additional sweetness and presentation.

Notes

  • Use ripe peaches for the best flavor and juiciness.
  • Do not overmix the batter to keep donuts light and tender.
  • Room temperature ingredients help create smooth batter and filling.
  • Fill donut cavities carefully to avoid filling spillover during baking.
  • Allow donuts to cool fully before applying glazes or toppings.
