Ingredients

Scale

Basic Ingredients

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 2 teaspoons gelatin powder

Flavor and Color

  • 1 teaspoon flavor extract (vanilla, strawberry, or raspberry)
  • Food coloring (pastel shades, as desired)

Finishing

  • Powdered sugar (for dusting and preventing sticking)

Instructions

  1. Prepare Your Ingredients and Tools: Gather and pre-measure all ingredients. Soak the gelatin powder in a small amount of cold water to bloom while you begin heating the sugar mixture.
  2. Cook the Sugar Mixture: Combine granulated sugar, corn syrup, and water in a saucepan over medium heat. Stir until the sugar dissolves completely, then let the mixture boil without stirring until it reaches the hard-ball stage, about 250°F (121°C) on a candy thermometer.
  3. Add Gelatin and Flavor: Remove the saucepan from the heat and quickly stir in the bloomed gelatin until fully dissolved. Add your chosen flavor extract and food coloring, mixing thoroughly for an even color and taste.
  4. Whip Until Fluffy: Transfer the hot mixture to a mixing bowl. Beat on high speed with a mixer for 8 to 10 minutes until the mixture triples in volume and becomes light and fluffy, resembling clouds.
  5. Shape and Dust the Bites: Using a spoon or cookie scoop, place dollops of the mixture onto a baking sheet dusted generously with powdered sugar. Let the bites set at room temperature for at least one hour. Once set, gently roll each bite in powdered sugar to prevent sticking and add a soft finish.

Notes

  • Use a candy thermometer to ensure the sugar reaches the correct hard-ball stage for optimal texture.
  • Bloom gelatin properly by soaking it in cold water before adding to avoid lumps.
  • Beat the mixture thoroughly to incorporate enough air for the fluffy cloud-like consistency.
  • Dust the baking surface and bites generously with powdered sugar to prevent sticking.
  • Work quickly after cooking since the sugar mixture hardens fast, making shaping easier when timing is precise.
