Scale

Main Ingredients

  • 2 cups glutinous rice (sticky rice), rinsed and soaked for at least 3 hours or overnight
  • 200g ground pork or chicken
  • 4 dried shiitake mushrooms, rehydrated and diced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 tablespoons soy sauce (use gluten-free if needed)
  • 1 teaspoon sesame oil
  • 2 green onions, finely chopped
  • Salt and pepper to taste
  • Vegetable oil, for frying

Instructions

  1. Prepare the Glutinous Rice: Rinse the glutinous rice thoroughly until the water runs clear. Soak the rice in water for at least 3 hours or overnight to achieve a chewy and sticky texture. Drain the rice before using.
  2. Make the Filling: In a pan over medium heat, sauté minced garlic and ginger until fragrant. Add ground pork or chicken and cook until browned. Stir in diced shiitake mushrooms, soy sauce, salt, and pepper. Cook until the mixture is aromatic and fully combined. Remove from heat and mix in chopped green onions and sesame oil.
  3. Form the Dumplings: Take a small handful of soaked rice and flatten it in your palm. Place a spoonful of filling in the center, then cover it with another layer of rice, enclosing the filling completely. Shape the dumpling into a tight ball or oval, pressing firmly to seal and prevent leaks.
  4. Pan-Fry to Golden Perfection: Heat vegetable oil in a skillet over medium heat. Fry the dumplings, turning occasionally, until all sides are a deep golden brown and irresistibly crispy. Avoid overcrowding the pan and fry in batches if necessary to maintain oil temperature.
  5. Serve Warm: Remove dumplings from the pan and drain excess oil on a paper towel. Serve immediately for the best crunch and flavor.

Notes

  • Don’t skip soaking the rice, as this ensures proper stickiness and even cooking.
  • Maintain medium heat when frying to avoid burning and to cook dumplings evenly.
  • Seal the rice around the filling tightly to prevent leaks during frying.
  • Use fresh garlic, ginger, and green onions for best aroma and flavor.
  • Fry in batches to keep oil temperature stable and preserve crispiness.
