Chicken
- 1.5 to 2 lbs boneless chicken breasts or thighs
Sauce
- 1/2 cup soy sauce (or tamari/coconut aminos for gluten-free)
- 1/4 cup honey (or maple syrup/brown sugar substitute)
- 3 garlic cloves, minced
- 1 tablespoon fresh grated ginger or 1 teaspoon ground ginger
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
For Thickening
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water (cornstarch slurry)
Garnishes
- 2 green onions, chopped
- 1 tablespoon toasted sesame seeds
- Prepare the Chicken: Trim any excess fat from chicken breasts or thighs for a leaner result. Place the chicken evenly into the slow cooker base for even cooking.
- Mix the Sauce: In a medium bowl, whisk together soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil until smooth and fully combined.
- Combine and Cook: Pour the sauce evenly over the chicken in the crock pot. Cover and cook on low for 4 to 6 hours until the chicken is tender and infused with flavors.
- Thicken the Sauce: About 20 minutes before serving, remove the chicken from the slow cooker. Stir the cornstarch slurry into the sauce and cook uncovered until it thickens into a glossy glaze.
- Finish and Serve: Shred or chop the chicken, and return it to the thickened sauce. Sprinkle with chopped green onions and toasted sesame seeds. Serve hot over rice or your favorite noodles.
Notes
- Use dark meat chicken thighs for moister, more flavorful results.
- Don’t skip the cornstarch thickening step to get a silky sauce that clings well.
- Toast sesame seeds in a dry pan just before serving to enhance their nutty aroma.
- Prep the night before by combining chicken and sauce in the crock pot insert, cover and refrigerate, then cook fresh the next day.
- Keep the slow cooker lid closed during cooking to prevent heat loss and extended cooking time.
