Instructions

  1. Prepare the Chicken: Trim any excess fat from chicken breasts or thighs for a leaner result. Place the chicken evenly into the slow cooker base for even cooking.
  2. Mix the Sauce: In a medium bowl, whisk together soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil until smooth and fully combined.
  3. Combine and Cook: Pour the sauce evenly over the chicken in the crock pot. Cover and cook on low for 4 to 6 hours until the chicken is tender and infused with flavors.
  4. Thicken the Sauce: About 20 minutes before serving, remove the chicken from the slow cooker. Stir the cornstarch slurry into the sauce and cook uncovered until it thickens into a glossy glaze.
