Perfect for busy weeknights, it delivers rich Philly cheesesteak flavors with the cozy texture of a potato casserole in an effortless, all-day slow-cooker meal.

Ingredients

Scale

Protein

  • 1 lb thinly sliced beef

Vegetables

  • 4 cups Yukon gold or red potatoes, chopped into bite-sized pieces
  • 1 cup green bell peppers, diced
  • 1 cup onions, diced
  • 1 cup sliced mushrooms (optional)

Dairy

  • 2 cups shredded cheddar or provolone cheese

Liquids & Seasonings

  • 1 cup beef broth
  • 1 tsp garlic powder
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce

Instructions

  1. Prepare the Ingredients: Slice the beef into thin strips and chop the potatoes into bite-sized pieces for even cooking. Dice the onions, bell peppers, and optional mushrooms, keeping all pieces uniform in size for consistent texture.
  2. Layer the Ingredients in the Crockpot: Spread a layer of chopped potatoes evenly on the bottom of the crockpot. Add the beef strips, then top with the diced onions, bell peppers, and mushrooms.
  3. Add Seasonings and Broth: Sprinkle garlic powder, salt, and pepper evenly over the layers. Drizzle Worcestershire sauce and pour the beef broth gently over the ingredients, moistening the mixture without flooding it.
  4. Cook on Low: Cover and cook on low heat for 6 to 8 hours, allowing the beef to become tender and the potatoes to soften while absorbing all flavorful juices.
  5. Add Cheese and Finish Cooking: About 30 minutes before serving, sprinkle shredded cheese evenly across the top. Cover again and let it melt into a creamy, cheesy layer that blends the dish together.

Notes

  • Use thinly sliced beef for faster, even cooking and a tender texture.
  • Yukon gold potatoes hold their shape well and become creamy without turning mushy.
  • Do not overload the crockpot to ensure even heat circulation and proper cooking.
  • Add cheese near the end of cooking to prevent it from overcooking and becoming rubbery.
  • Adjust seasonings during cooking if desired, tasting the broth halfway through to add more salt or Worcestershire as needed.
