Easy Breakfast Taquitos

Easy Breakfast Taquitos

Easy Breakfast Taquitos offer a quick, flavorful, and handheld morning meal that combines fluffy eggs, melted cheese, and savory fillings rolled in soft flour tortillas and cooked to crispy perfection. Perfect for busy mornings or on-the-go snacks, they are customizable, kid-friendly, and packed with nutrition.

Ingredients

Main Ingredients

  • Flour tortillas – soft and pliable, about 6-8 pieces
  • Eggs – 6 large
  • Cheese – 1 cup shredded (cheddar, Monterey Jack, or your choice)
  • Cooked breakfast meat (optional) – 1/2 cup diced bacon, sausage, or ham
  • Vegetables – 1/2 cup diced bell peppers, onions, or spinach
  • Salt and pepper – to taste
  • Cooking oil or butter – 2 tablespoons for sautéing and crisping

Instructions

  1. Prepare the Filling: Beat the eggs with salt and pepper, then scramble them in a lightly greased skillet over medium heat until fully cooked but still moist. Mix in the shredded cheese, cooked meat if using, and sautéed vegetables until everything is warm and well combined.
  2. Assemble the Taquitos: Lay a flour tortilla flat on a clean surface. Spoon a generous amount of the egg filling onto one side of the tortilla. Roll tightly from the filling side to form a tube. Repeat this process with the remaining tortillas and filling.
  3. Crisp the Taquitos: Heat the oil or butter in a skillet over medium-high heat. Place the rolled taquitos seam-side down in the skillet. Cook until golden brown and crispy on all sides, turning occasionally to ensure even crispness.
  4. Drain and Serve: Remove the taquitos from the skillet and place them on a paper towel-lined plate to absorb any excess oil. Serve warm with your favorite dips such as salsa, guacamole, or sour cream.

Notes

  • Don’t overfill the tortillas to make rolling easier and prevent bursting during cooking.
  • Use fresh, soft tortillas for better rolling without cracking.
  • Heat your skillet well before cooking for a quickly crisped exterior without drying out the filling.
  • For a lighter option, bake taquitos at 400°F (200°C) for 15-20 minutes until crispy.
  • Allow cooked eggs to cool slightly before assembling to prevent soggy taquitos.
