Instructions

  1. Prepare and Cook the Beef: Season the beef roast generously with salt and pepper. Heat butter and olive oil in a hot skillet over medium-high heat. Sear the beef on all sides until browned and caramelized to lock in the juices.

  3. Shred the Beef: Finish cooking the beef roast through in the oven or slow cooker until tender. Remove and shred the beef with two forks. Toss the shredded meat in the warm au jus to soak up extra flavor and keep moist.
  4. Assemble the Biscuits: Slice the biscuits in half horizontally. Optionally spread a little butter on the insides to soften. Pile a generous amount of saucy shredded beef onto each bottom biscuit half. Top each with a slice of Swiss cheese.
