Instructions

  1. Preheat and Prep: Preheat your oven to 425°F (220°C) to ensure a hot start for crispy wedges. Wash and thoroughly dry the russet potatoes, then cut each potato into approximately eight even wedges to promote uniform baking.
  2. Season the Wedges: Place the potato wedges in a large mixing bowl. Drizzle with olive oil, then sprinkle garlic powder, salt, pepper, and your chosen dried herbs (if using). Toss well to ensure each wedge is evenly coated with the seasoning for a rich, savory flavor.
  3. Bake Until Golden: Arrange the seasoned wedges in a single layer on a parchment-lined or silicone mat–lined baking sheet, making sure not to overcrowd them. Bake for 25-30 minutes, flipping the wedges halfway through, until the edges turn golden brown and crispy.
  4. Add Parmesan: Remove the baking sheet from the oven and immediately sprinkle the grated Parmesan cheese evenly over the hot potato wedges. Return the baking sheet to the oven for an additional 5 minutes, allowing the cheese to melt and become slightly caramelized.
