Ingredients

Scale

Steak

  • 8 oz ribeye or sirloin steak, sliced into thin strips
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Pasta

  • 9 oz fresh or frozen cheese tortellini
  • Salt (for pasta water)

Garlic Sauce

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced

Finishing Touches

  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Crushed red pepper flakes (optional, to taste)

Instructions

  1. Prepare the Steak: Slice the steak into thin strips. Season with salt and pepper. Heat olive oil in a large pan over medium-high heat. Sear the steak strips until browned and tender, about 2 to 3 minutes per side. Remove the steak from the pan and set aside.
  2. Cook the Tortellini: Bring a large pot of salted water to a boil. Cook the cheese tortellini according to package instructions until al dente. Drain, reserving a small cup of pasta water, and set tortellini aside.
  3. Make the Garlic Sauce: In the same pan used for the steak, reduce heat to medium. Melt butter with a splash of olive oil. Add minced garlic and sauté until fragrant and golden, about 1 to 2 minutes. Be careful not to burn the garlic.
  4. Combine Ingredients: Return cooked tortellini and steak strips to the pan. Toss to combine, adding reserved pasta water as needed to loosen the sauce. Sprinkle grated Parmesan cheese and chopped parsley over the top. Stir gently to create a luscious coating.
  5. Final Touches: Adjust seasoning with salt, pepper, and optional crushed red pepper flakes. Serve immediately while hot for the best flavor and texture.

Notes

  • Choose quality steak for best tenderness and flavor.
  • Do not overcook steak; it will finish cooking with the pasta.
  • Use fresh garlic for the most vibrant flavor.
  • Reserve pasta water to loosen and thicken the sauce without diluting flavor.
  • Fresh herbs like parsley or basil add brightness and balance richness.
