Ingredients

Scale

Bread and Base

  • 1 rustic baguette or Italian bread, sliced into 1-inch thick pieces
  • 2 tablespoons unsalted butter, softened to room temperature
  • 1 tablespoon olive oil (for brushing grill)

Flavoring

  • 3 fresh garlic cloves, minced or pressed
  • 1 tablespoon fresh parsley, finely chopped (or substitute herbs such as oregano, thyme, basil, cilantro, or chives)
  • Pinch of salt
  • Freshly ground black pepper, to taste

Optional Variations

  • 1/4 cup shredded Parmesan or mozzarella cheese (for cheesy upgrade)
  • 1/2 teaspoon crushed red pepper flakes or smoked paprika (for spicy kick)
  • Vegan margarine or additional olive oil (to replace butter for vegan version)
  • Alternative breads such as whole grain, gluten-free, ciabatta, sourdough, or sandwich bread

Instructions

  1. Prepare the Garlic Butter Spread: Soften the unsalted butter to room temperature for easy mixing. Mince or press the garlic cloves finely, then combine with the butter in a bowl. Stir in the chopped fresh herbs, a pinch of salt, and freshly ground black pepper until well blended to create the garlic butter base.
  2. Slice the Bread: Cut your chosen rustic bread into thick, 1-inch slices. This thickness helps maintain a balance between crunchy edges and a soft interior when grilled. Arrange the slices on a flat surface ready for spreading.
  3. Spread Generously: Using a butter knife or spatula, spread an even and generous layer of the prepared garlic butter mixture onto one side of each bread slice. This layer delivers flavor and keeps the bread moist during grilling.
  4. Preheat the Grill: Heat your grill to medium temperature, about 350–400°F (175–200°C). Lightly oil the grill grates to prevent the bread from sticking and to help achieve those signature grill marks.
  5. Grill the Bread: Place the bread slices butter-side down on the grill. Grill for approximately 2-3 minutes per side until golden grill marks appear and the bread is crispy without burning. Flip the slices carefully to toast the plain side slightly for an even texture. Remove from heat and serve warm immediately.

Notes

  • Use day-old bread for better absorption of butter and more even grilling without sogginess.
  • Adjust the amount of garlic to avoid overpowering bitterness; fresh garlic is potent.
  • Monitor grilling closely as bread can burn quickly; flip at the right moment for perfect crispiness.
  • Use fresh herbs whenever possible for brighter flavor and color compared to dried alternatives.
  • Experiment with different bread types such as ciabatta, sourdough, or thick sandwich bread to vary texture and taste.
