Ingredients

Scale

Fish and Marinade

  • 4 Mahi Mahi Fillets (about 6 ounces each)
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Lime Juice
  • 1 teaspoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoon Garlic Powder
  • Salt and Pepper, to taste

Toppings and Assembly

  • 8 Small Corn Tortillas
  • 2 cups Thinly Sliced Cabbage
  • 1/4 cup Chopped Fresh Cilantro
  • 1 Avocado, sliced
  • 1 tablespoon Fresh Lime Juice (for slaw)
  • Sour Cream or Greek Yogurt, for serving (optional)

Instructions

  1. Prepare the Fish: Rinse mahi mahi fillets and pat dry. In a small bowl, whisk together olive oil, fresh lime juice, chili powder, cumin, garlic powder, salt, and pepper. Coat the fish evenly with the marinade and let it rest for 15 to 20 minutes to absorb the flavors.
  2. Preheat and Grill: Heat the grill to medium-high. Place mahi mahi directly on the grill grates and cook for 4 to 5 minutes per side until the fish is opaque and flakes easily with a fork.
  3. Prepare the Toppings: While the fish cooks, toss thinly sliced cabbage, chopped cilantro, and a squeeze of lime juice in a bowl to create a refreshing slaw. Slice the avocado and set aside. Prepare tortillas for warming.
  4. Warm the Tortillas: Wrap the corn tortillas in foil and heat them on the grill for 1 to 2 minutes per side until soft and pliable, perfect for folding.
  5. Assemble the Tacos: Break grilled mahi mahi into large chunks and place inside each warm tortilla. Top with cabbage slaw, avocado slices, and a dollop of sour cream or Greek yogurt if desired. Serve immediately for optimal freshness and taste.

Notes

  • Use the freshest mahi mahi available for the best flavor and texture.
  • Do not marinate the fish for longer than 20 minutes as the lime juice acid can start to cook the fish.
  • Ensure the grill is properly preheated to achieve beautiful grill marks and seal in juices.
  • Remove mahi mahi from grill as soon as it flakes to avoid overcooking and keep it juicy.
  • Warm tortillas just before serving to prevent breakage and enhance flavor.
