Grilled Shrimp Piccata Skewers

Grilled Shrimp Piccata Skewers are a quick and delicious seafood dish bursting with fresh lemon, briny capers, and aromatic garlic flavors. Perfectly grilled and finished with fresh parsley, these skewers are ideal for a light, healthy weeknight dinner or a vibrant summer barbecue.

Ingredients

Scale

Shrimp and Marinade

  • 1 lb fresh peeled and deveined shrimp
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons capers, drained and chopped (optional some whole for garnish)
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

For Serving and Garnish

  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges, for garnish
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes before use)

Instructions

  1. Prepare the shrimp: Rinse the shrimp under cold water and pat them dry thoroughly with paper towels. If not already deveined, remove the vein from each shrimp for better texture and flavor absorption.
  2. Marinate the shrimp: In a mixing bowl, combine lemon juice, minced garlic, chopped capers, olive oil, salt, and pepper. Toss the shrimp gently in this marinade and let them sit for 10 to 15 minutes to soak up the fresh, zesty flavors without becoming mushy.
  3. Skewer the shrimp: Thread the marinated shrimp onto the soaked wooden or metal skewers, leaving a small space between each shrimp to ensure even cooking on the grill.
  4. Grill the shrimp: Preheat your grill to medium-high heat. Place the shrimp skewers on the grill and cook each side for 2 to 3 minutes, or until the shrimp turn pink and opaque. Avoid overcooking to keep them juicy and tender.
  5. Finish and serve: Remove the skewers from the grill, then sprinkle freshly chopped parsley on top. Drizzle with additional lemon juice or caper brine if desired for an extra pop of flavor. Serve immediately while hot.

Notes

  • Use fresh shrimp or fully thaw frozen shrimp for the best flavor and texture.
  • Marinate only for 10 to 15 minutes to avoid mushy shrimp.
  • Preheat grill to ensure nice sear marks and juicy shrimp.
  • Soak wooden skewers in water for at least 30 minutes to prevent burning.
  • Serve immediately off the grill for optimal flavor and texture.
  • Variations include adding red pepper flakes for heat or threading vegetables like cherry tomatoes and bell peppers alongside shrimp.
