Ingredients

Scale

Vegetables

  • 1 red bell pepper, chopped into 1 to 1.5 inch chunks
  • 1 yellow bell pepper, chopped into 1 to 1.5 inch chunks
  • 1 orange bell pepper, chopped into 1 to 1.5 inch chunks
  • 1 medium zucchini, sliced into 1 to 1.5 inch pieces
  • 1 red onion, cut into wedges about 1 to 1.5 inches
  • 8 oz mushrooms, whole or halved depending on size
  • 12 cherry tomatoes

Herb Sauce

  • 1 cup fresh parsley leaves
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh cilantro leaves
  • 2 cloves garlic
  • 3 tablespoons fresh lemon juice
  • 1/4 cup olive oil
  • Salt to taste
  • Freshly ground black pepper to taste

Additional Items

  • Wooden or metal skewers
  • Olive oil for brushing

Instructions

  1. Prepare the Veggies: Wash all vegetables thoroughly. Chop bell peppers, zucchini, and onion into even chunks about 1 to 1.5 inches to ensure consistent cooking. Keep tomato and mushroom sizes manageable on skewers.
  2. Soak the Skewers: If using wooden skewers, soak them in cold water for at least 30 minutes to prevent burning during grilling.
  3. Make the Herb Sauce: In a blender or food processor, combine parsley, basil, cilantro, garlic, lemon juice, olive oil, salt, and pepper. Blend until you achieve a smooth and vibrant sauce. Adjust seasoning as needed.
  4. Assemble the Skewers: Thread the vegetables onto skewers in an alternating colorful pattern for balanced cooking and presentation. Leave a small space between pieces for heat circulation.
  5. Grill the Skewers: Preheat grill to medium-high heat. Lightly brush skewers with olive oil. Grill for 10-12 minutes, turning every few minutes until vegetables are tender with grill marks but still hold their shape.
  6. Serve with Herb Sauce: Arrange skewers on a platter and drizzle generously with herb sauce or serve the sauce on the side for dipping. Enjoy the contrast between smoky grilled veggies and bright fresh sauce.

Notes

  • Cut vegetables into uniform sizes to ensure even cooking and avoid burnt or undercooked pieces.
  • Olive oil helps prevent sticking and promotes even caramelization on the grill.
  • Do not overcrowd skewers; leave space between pieces for better heat circulation.
  • Maintain medium-high heat on the grill to avoid charring outside while leaving vegetables raw inside.
  • Use fresh herbs for the sauce to maximize flavor intensity. Dried herbs will not provide the same vibrant taste.
  • Allow skewers to rest a few minutes after grilling for flavors to meld.
