Ingredients

Scale

Pastry Dough

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 2 tablespoons granulated sugar
  • Optional: 2 oz cream cheese, cold
  • 23 tablespoons cold water (as needed)

Filling

  • 1/2 cup fruit filling or jam (such as strawberry, blueberry, or apple cinnamon)

Egg Wash

  • 1 egg, beaten (for brushing)

Glaze

  • 1/2 cup powdered sugar
  • 23 teaspoons milk (room temperature)

Instructions

  1. Prepare the Dough: Combine cold cubed butter with all-purpose flour and granulated sugar in a bowl. Use your fingertips or a pastry cutter to blend until pea-sized lumps form, ensuring a flaky texture. Add cream cheese if using, then slowly add cold water just until the dough comes together into a ball. Wrap the dough in plastic and chill for at least 30 minutes.
  2. Roll and Shape: Lightly flour a work surface and roll the chilled dough into a large rectangle about 1/8 inch thick. Cut the dough into equal squares approximately 3 by 3 inches to form individual strudel pockets.
  3. Add the Filling: Place a spoonful of your chosen fruit filling or jam in the center of half the dough squares, being careful not to overfill to prevent leaking. Lightly brush the edges with water or egg wash, then top with the remaining dough squares. Gently press the edges to seal each pocket.
  4. Bake: Transfer the assembled strudels onto a parchment-lined baking sheet. Brush the tops with beaten egg wash to enhance browning. Bake in a preheated oven at 375°F (190°C) for 18-20 minutes, or until golden brown and puffed.
  5. Glaze and Serve: While the strudels cool slightly, prepare the glaze by mixing powdered sugar with milk until smooth. Drizzle the glaze over warm strudels for a shiny, sweet finish before serving.

Notes

  • Keep all ingredients cold throughout preparation to ensure a flaky pastry.
  • Do not overfill the strudel pockets to avoid leaking during baking.
  • Use room temperature milk in the glaze for a smooth drizzling consistency.
  • Chill the dough before rolling to prevent shrinkage and ease handling.
  • Brush the edges well with water or egg wash to properly seal the pastries.
