Instructions

  1. Step 1: Sauté the Base – Set the Instant Pot to sauté mode. Add oil and butter, then sauté diced onions, garlic, carrots, and celery until softened and fragrant, about 5 minutes.
  2. Step 2: Add Chicken and Broth – Add chicken pieces to the pot along with chicken broth, thyme, salt, and pepper. Stir to combine, ensuring the chicken is submerged.
  3. Step 3: Pressure Cook – Secure the lid and cook on high pressure for 10 minutes. Perform a quick release when done to reveal tender chicken and a flavorful broth.
  4. Step 4: Prepare the Dumpling Dough – While the chicken cooks, mix flour, baking powder, salt, and milk (or buttermilk) in a bowl until just combined. The dough should be slightly sticky but manageable.
  5. Step 5: Add Dumplings and Simmer – Switch Instant Pot to sauté mode again. Drop spoonfuls of dumpling dough gently into the hot broth. Cover with the lid slightly ajar and simmer for 8 minutes until dumplings are fluffy and cooked through.
