Ingredients

Scale

Main Ingredients

  • 4 fresh ears of corn on the cob (with bright green husks and plump kernels)
  • 1 cup water
  • Pinch of salt

Optional Ingredients

  • Butter (to taste)
  • Fresh herbs or spices (e.g. paprika, garlic powder, chives, thyme, rosemary, parsley)
  • Chili powder or cayenne (for spicy kick)
  • Parmesan or cotija cheese (for topping)
  • Lemon slices or zest (for brightness)
  • Olive oil or vegan margarine (for vegan version)

Instructions

  1. Prep the Corn: Peel back the husks and remove all the silk from each ear. Leave the cobs whole or cut them in half if your Instant Pot is small. Rinse them lightly and set aside.
  2. Add Water and Seasoning: Pour 1 cup of water into the Instant Pot insert. Add a pinch of salt to the water to enhance the sweetness of the corn.
  3. Place Corn in the Pot: Use the trivet or steamer basket to keep the corn elevated above the water. Arrange the ears so they fit comfortably without overcrowding.
  4. Cook Under Pressure: Seal the lid and set the Instant Pot to manual high pressure for 2 to 4 minutes depending on your desired tenderness—2 minutes for firmer kernels, 4 minutes for very tender corn.
  5. Quick Release Pressure: When cooking time is complete, perform a careful quick pressure release to release steam immediately. Open the lid and remove the corn.
  6. Add Butter and Serve: Brush the hot corn with butter and sprinkle with your choice of herbs or spices. Serve immediately while warm and juicy.

Notes

  • Use fresh corn for the sweetest and best cooking results.
  • Always use a trivet or steamer basket to keep corn above the water and prevent soggy kernels.
  • Adjust cooking time based on the size of the ears and desired tenderness.
  • Line the Instant Pot inner pot with parchment paper under the trivet for easier cleanup.
  • Experiment with using broth or citrus slices in the cooking water to add subtle flavors.
