Instructions

  1. Prepare the Lobster: Cook lobster tails or claws in boiling salted water for 5-7 minutes until opaque and just cooked through. Carefully remove the meat from the shells and chop into bite-sized pieces if needed.
  2. Cook the Bucatini Pasta: Boil bucatini pasta in plenty of salted water until just al dente (9-11 minutes). Reserve 1 cup of pasta cooking water, then drain the pasta.
  3. Make the Sauce: Melt butter in a large skillet over medium heat. Add minced garlic and shallots and sauté for 2-3 minutes until fragrant and translucent. Pour in white wine and allow it to reduce by half.
  4. Combine Cream and Season: Lower the heat and stir in heavy cream and optional crushed red pepper flakes. Simmer gently for 3-4 minutes until the sauce thickens slightly. Season with salt and black pepper to taste.
  5. Toss Pasta and Lobster: Add drained bucatini to the sauce, incorporating reserved pasta water a little at a time until the sauce coats the pasta perfectly. Gently fold in lobster meat and heat through without overcooking.
  6. Finish with Fresh Herbs: Remove skillet from heat and sprinkle with freshly chopped parsley and basil. Toss once more to blend flavors.
