Pastry Base

Mango Curd Filling

  • 2 cups fresh ripe mango puree (approximately 23 medium mangoes)
  • 3 large egg yolks
  • 3/4 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 4 tablespoons unsalted butter
  • 1 tablespoon cornstarch (or all-purpose flour)

Instructions

  1. Prepare the Shortcrust Pastry: Mix the flour, cold butter, and a pinch of salt until the mixture resembles breadcrumbs. Add cold water gradually to bind the dough. Chill the dough in the refrigerator for at least 30 minutes. Once chilled, roll out the dough and press it into a tart pan. Trim any excess edges and bake blind until golden and crisp.
  2. Make the Mango Curd Filling: In a saucepan over low heat, combine the mango puree, sugar, lemon juice, and egg yolks. Stir continuously to prevent curdling. Add butter and cornstarch, whisking until the mixture thickens into a glossy, smooth curd. Remove from heat carefully once thickened.
  3. Assemble the Tart: Let the baked tart shell cool completely. Pour the mango curd evenly into the crust and smooth the top with a spatula. Chill the tart in the refrigerator for several hours to allow the filling to set and develop flavor.
  4. Garnish and Serve: Decorate with fresh mango slices, edible flowers, or toasted coconut flakes before serving for an inviting presentation.
