Ingredients

Scale

Main Ingredients

  • 4 fresh salmon fillets, skin-on
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (adjust to taste)
  • 2 tbsp fresh basil or parsley, chopped
  • 1 tbsp lemon juice or 1 tsp lemon zest
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry with paper towels and season generously with salt and pepper on both sides. This ensures a flavorful crust and helps lock in moisture during cooking.
  2. Sear the Salmon: Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets skin-side down and cook undisturbed for 4-5 minutes until the skin crisps up. Flip and cook for an additional 2-3 minutes until the salmon is just cooked through. Remove the fillets from the skillet and set aside.
  3. Make the Creamy Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Stir in the chopped sun-dried tomatoes and red pepper flakes, cooking for 1-2 minutes. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and the sauce thickens slightly.
  4. Combine and Finish: Return the salmon fillets to the skillet, spooning the sauce over the top. Let everything simmer together for 2-3 minutes so the salmon absorbs the flavors. Finish by sprinkling with fresh basil or parsley and squeezing lemon juice over the dish for a bright, fresh touch.

Notes

  • Use room temperature salmon by removing it from the fridge 15 minutes before cooking for even cooking.
  • Do not overcrowd the pan; cook salmon in batches if necessary to maintain a perfect sear.
  • Save the crispy salmon skin; it’s tasty and adds texture if desired.
  • Always use freshly minced garlic for the best aroma and flavor.
  • If you want a thicker sauce, simmer it longer; to thin it out, add a splash of broth or more cream.
