  • 1.5 lbs baby potatoes, washed and halved or quartered
  • 1 cup cucumbers, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh parsley, finely chopped
  • 2 tbsp fresh dill, finely chopped

Olives & Add-ins

  • 1/2 cup Kalamata olives, pitted and halved

Dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • Sea salt, to taste
  • Black pepper, to taste

Instructions

  1. Boil the Potatoes: Wash and chop baby potatoes into bite-sized pieces. Place them in boiling salted water and cook until tender but firm—about 12-15 minutes. Drain and let cool slightly.
  2. Prepare the Vegetables and Herbs: While potatoes cook, chop the cucumbers, halve the cherry tomatoes, thinly slice the red onion, and finely chop parsley and dill. Set aside.
  3. Make the Dressing: In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, minced garlic, salt, and pepper until emulsified and flavorful.
  4. Combine Ingredients: In a large mixing bowl, gently toss the warm potatoes with cucumbers, tomatoes, olives, onions, and herbs.
  5. Dress the Salad: Pour the dressing over the salad and toss carefully to coat everything evenly. Taste and adjust seasoning as needed.
  6. Chill and Serve: Refrigerate the Mediterranean Potato Salad for at least 30 minutes to let flavors meld beautifully, then serve cold or at room temperature.
