Ingredients

Base Ingredients

  • Cornbread mix – 1 cup (use gluten-free if preferred)
  • Fresh lump or claw crab meat – 1 cup, drained
  • Cheddar cheese, shredded – 1/2 cup
  • Eggs – 2 large
  • Sour cream – 1/4 cup
  • Butter, melted – 2 tablespoons
  • Green onions, finely chopped – 2 stalks
  • Salt – 1/2 teaspoon
  • Black pepper – 1/4 teaspoon
  • Old Bay seasoning (optional) – 1/4 teaspoon

Instructions

  1. Prepare the Ingredients: Preheat your oven to 375°F (190°C) and grease a mini muffin tin. Ensure the crab meat is fresh, drained, and free of excess moisture. Finely chop the green onions and grate the cheddar cheese if not pre-shredded.
  2. Mix the Wet Ingredients: In a large bowl, whisk together the eggs, sour cream, and melted butter until smooth and creamy. This mixture will keep the muffins moist and tender.
  3. Combine Dry Ingredients: In a separate bowl, lightly mix the cornbread mix, salt, pepper, Old Bay seasoning (if using), and shredded cheddar cheese, ensuring the cheese is evenly distributed.
  4. Incorporate Crab and Onions: Gently fold the crab meat and chopped green onions into the wet mixture. Then combine the wet and dry ingredients, stirring just until fully incorporated to avoid overmixing and keep the muffins light.
  5. Fill the Muffin Tin and Bake: Spoon the batter evenly into the prepared mini muffin cups, filling each about three-quarters full. Bake for 15 to 18 minutes, or until the tops turn golden and a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Let the muffins cool in the pan for 5 minutes before removing. Serve warm as they are or with your favorite dipping sauces like tartar sauce, spicy aioli, or remoulade.

Notes

  • Use fresh lump crab meat whenever possible for the best flavor and texture.
  • Do not overmix the batter to keep the muffins light and tender.
  • Grease the muffin tin well to prevent sticking and achieve golden-brown edges.
  • Sharp cheddar cheese provides a stronger flavor, but mild cheddar allows the crab to shine.
  • Serve the muffins fresh for optimal taste; warm gently if reheating.
