Ingredients

Scale

For the Dough

  • 3 ½ cups high-gluten flour
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 ¼ cups lukewarm water (about 110°F / 43°C)
  • 2 tablespoons olive oil
  • 1 teaspoon salt

For the Sauce

  • 1 can (28 oz) crushed tomatoes
  • 3 cloves fresh garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh basil leaves, chopped (or ½ teaspoon dried basil)

For the Cheese and Toppings

  • 16 oz low-moisture whole milk mozzarella cheese, shredded
  • Optional toppings: pepperoni, mushrooms, bell peppers, fresh basil leaves

Instructions

  1. Prepare the Dough: In a large bowl, combine high-gluten flour, active dry yeast, salt, olive oil, and lukewarm water. Mix and knead the dough on a floured surface until smooth and elastic. Cover with a clean cloth and let it rise in a warm place for at least one hour or until doubled in size to develop that characteristic chewy texture.
  2. Make the Sauce: While the dough rises, blend crushed tomatoes, minced garlic, olive oil, salt, oregano, and basil together. Simmer the sauce lightly on low heat for 10–15 minutes, allowing the flavors to meld while keeping it fresh and vibrant.
  3. Shape the Dough: Punch down the risen dough and stretch it gently on a pizza stone or baking sheet into a large, thin circle. Avoid overworking the dough to preserve air pockets that contribute to crispness and chewiness.
  4. Add Sauce and Cheese: Spread a thin, even layer of the prepared tomato sauce over the dough. Generously sprinkle shredded mozzarella cheese on top, ensuring enough coverage for a melty, bubbly finish without overwhelming the crust or sauce.
  5. Add Toppings and Bake: Arrange your preferred toppings sparsely on the pizza. Preheat your oven to its highest temperature (around 500°F / 260°C) and bake the pizza for 10–15 minutes until the crust is golden and crispy, and the cheese is bubbling and lightly browned.

Notes

  • Use a pizza stone to replicate the high heat of traditional pizza ovens for the best crust texture.
  • Do not overload toppings to prevent soggy crust and ensure balanced flavor.
  • Allowing the dough to rest and ferment properly enhances both flavor and texture.
  • Baking at very high temperatures is key to authentic New York-style pizza.
  • Slice the pizza while it is still warm for easy folding and the best taste experience.
