  • 1 ½ cups raw cashews (soaked for at least 4 hours or overnight)
  • ½ cup freshly squeezed lemon juice (about 23 lemons)
  • 1 tablespoon lemon zest
  • ⅓ cup maple syrup
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Crust: Soak Medjool dates if they’re not soft. In a food processor, pulse the dates with almond flour until a sticky dough forms. Press this firmly into the lined bottom of a baking pan to create the crust base.
  2. Blend the Filling: Drain the soaked cashews and combine them with fresh lemon juice, lemon zest, maple syrup, melted coconut oil, and vanilla extract in a high-speed blender. Blend until completely smooth and creamy, scraping down the sides as needed.
  3. Assemble and Chill: Pour the creamy lemon filling evenly over the crust in your pan, smoothing the top with a spatula. Cover with plastic wrap or a lid and refrigerate for at least 4 hours, or until fully set and firm.
  4. Slice and Serve: Once chilled and firm, remove from the fridge and use a sharp knife warmed under hot water to cut into bars. Wipe the knife between cuts for clean slices. Enjoy!
