Instructions

  1. Prepare the Rice: Rinse 1/2 cup of short-grain rice under cold water until the water runs clear to remove excess starch and prevent clumping. Cook the rice gently in 2 cups of whole milk over medium heat, stirring frequently to prevent sticking, until the rice is tender and most of the milk is absorbed.
  2. Mix the Custard Base: In a separate bowl, whisk together 3 egg yolks, 1/3 cup granulated sugar, and a pinch of salt until pale and smooth. Slowly add a small amount of the hot rice and milk mixture into the egg yolks to temper them and avoid scrambling. Then, pour the tempered egg mixture back into the pot with the rice.
  3. Cook the Custard Together: Return the pot to low heat. Add 1 teaspoon of vanilla extract and continue to cook gently while stirring constantly. Cook until the mixture thickens into a silky custard that coats the back of a spoon, being careful not to boil to maintain smooth texture. If using cinnamon stick or ground cinnamon, add it during this cooking phase and remove the stick before serving.
  4. Final Touches and Cooling: Remove the custard from heat and allow it to cool slowly. Serve warm or chill in the refrigerator to let the flavors deepen and the custard set further.
