Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts

Pasta & Grains

  • 1 cup dry orzo pasta

Vegetables & Aromatics

  • 3 cloves garlic, minced
  • 1/2 cup chopped sun-dried tomatoes (preferably oil-packed)

Liquids

  • 2 1/2 cups chicken broth
  • 1/2 cup heavy cream or half and half
  • 2 tablespoons olive oil

Cheese & Dairy

  • 1/2 cup freshly grated parmesan cheese

Herbs & Seasonings

  • 1/4 cup fresh basil leaves, chopped or 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Sear the Chicken: Season the chicken breasts with salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear the chicken on both sides until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken from the pan and set aside.
  2. Sauté Aromatics and Tomatoes: In the same skillet, add the remaining olive oil if needed. Add minced garlic and chopped sun-dried tomatoes. Cook for about 2 minutes, stirring frequently until fragrant and slightly softened, taking care not to burn the garlic.
  3. Add Orzo and Broth: Stir the dry orzo pasta into the pan, coating it well with the garlic and tomato mixture. Pour in the chicken broth, scraping the pan bottom to release any browned bits. Bring the mixture to a gentle simmer to cook the pasta and infuse flavor.
  4. Return Chicken and Add Cream: Place the seared chicken breasts back on top of the orzo. Pour in the heavy cream or half and half. Simmer everything gently for 12-15 minutes until the chicken is fully cooked through and the orzo is tender and creamy.
  5. Finish with Cheese and Herbs: Sprinkle freshly grated parmesan over the dish. Stir gently until the cheese melts into a silky sauce. Add the fresh basil or Italian seasoning, then adjust salt and pepper to taste. Let the dish rest off the heat for a few minutes to blend flavors before serving.

Notes

  • Pound chicken breasts to an even thickness for uniform cooking.
  • Simmer gently after adding broth and cream to prevent curdling.
  • Monitor orzo to avoid overcooking; it should be tender but slightly al dente.
  • Choose oil-packed sun-dried tomatoes for richer flavor or rehydrate dry ones before using.
  • Let the dish rest a few minutes off the heat for flavors to meld and sauce to thicken.
