Ingredients

Scale

Flatbread Base

  • 1 thin store-bought flatbread or naan (can use gluten-free version)
  • 2 tablespoons olive oil (for brushing)

Toppings

  • 2 ripe but firm pears (Bartlett or Anjou), cored and thinly sliced
  • 100 grams crumbled Gorgonzola cheese
  • 1 tablespoon honey (for drizzling)
  • 1 teaspoon fresh thyme leaves or rosemary
  • Freshly cracked black pepper, to taste

Optional Garnishes and Variations

  • Toasted walnuts or pecans
  • Fresh arugula or baby spinach leaves
  • Red pepper flakes or chili honey for spice

Instructions

  1. Prepare the flatbread base: Preheat your oven to 400°F (200°C). Place the flatbread on a baking sheet and brush it lightly with olive oil on both sides to ensure a crisp and golden crust.
  2. Arrange the pear slices: Core and thinly slice the pears, then evenly layer them over the olive oil-brushed flatbread, making sure to cover the surface without overcrowding.
  3. Add the Gorgonzola cheese: Sprinkle crumbled Gorgonzola generously over the pears, distributing the cheese for balanced flavor in every bite.
  4. Season and add herbs: Drizzle a little olive oil and honey over the top, sprinkle fresh thyme leaves and a pinch of cracked black pepper to build complex layers of taste.
  5. Bake to perfection: Place the flatbread in the oven and bake for 10-12 minutes or until the cheese is bubbly, the edges are crisp, and the pears have softened slightly.

Notes

  • Use ripe but firm pears to avoid sogginess.
  • Lightly brush oil to crisp the crust without greasiness.
  • Don’t skimp on cheese for bold flavor contrast.
  • Add fresh herbs either before baking or immediately after to retain aroma.
  • Monitor baking closely to prevent burning, especially with thinner flatbreads.
