Instructions

  1. Prepare the Beets: Thoroughly wash the beets to remove any dirt. Trim the beet greens, then boil the beets in salted water for 30 to 40 minutes or until tender when pierced with a fork. Once cooked, drain and let them cool enough to handle before peeling off the skins, which should come off easily.
  2. Slice the Beets: After peeling, slice the beets into your preferred shape—wedges, cubes, or thin rounds—depending on how you want to use your pickled beets later.
  3. Make the Pickling Brine: In a saucepan, combine apple cider vinegar, water, sugar, salt, cloves, peppercorns, and crushed garlic cloves. Bring the mixture to a simmer, stirring occasionally to dissolve the sugar and salt completely. Once hot and fragrant, remove from heat.
  4. Pack the Jars: Place the sliced beets into sterilized jars, then carefully pour the hot brine over the beets, ensuring they are fully submerged. Seal the jars with tight-fitting lids.
  5. Let Them Pickle: Allow the jars to cool to room temperature before transferring them to the refrigerator. Let your pickled beets sit for at least 24 hours before enjoying, although they taste even better after a few days.
