Crust
- 1 cup graham cracker crumbs
- 3 tbsp butter, melted
- 1 tbsp sugar
Cheesecake Filling
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1 cup heavy cream, whipped
- 1 tsp vanilla extract
- 1/2 cup crushed pistachios, finely chopped
Garnish
- Fresh raspberries
- Crushed pistachios
- Prepare the crust: Combine the graham cracker crumbs with melted butter and sugar, then evenly press the mixture into silicone dome molds or muffin tins to form a firm, buttery base.
- Make the pistachio cheesecake filling: Beat softened cream cheese with sugar until smooth. Gradually fold in whipped heavy cream and vanilla extract, then gently mix in finely chopped pistachios to distribute their crunch throughout the filling.
- Assemble the domes: Spoon the pistachio cheesecake filling over the prepared crusts in the molds, place a few fresh raspberries in the center of each dome, and cover with more filling to create a smooth dome shape with berries nestled inside.
- Chill until set: Cover the molds with plastic wrap and refrigerate for at least 4 hours or overnight to allow the domes to firm up properly.
- Unmold and garnish: Carefully release the domes from the molds and garnish each with crushed pistachios and fresh raspberries for a stunning finish and added texture.
Notes
- Use room temperature cream cheese for smooth mixing and no lumps.
- Silicone molds make unmolding easy without damaging the dome shapes.
- Be sure to chill thoroughly to ensure a firm and clean-cut cheesecake dome.
- Always use fresh raspberries for the best tartness and texture.
- Lightly toast pistachios to enhance their nutty flavor.
