Instructions

  1. Prepare the crust: Combine the graham cracker crumbs with melted butter and sugar, then evenly press the mixture into silicone dome molds or muffin tins to form a firm, buttery base.
  2. Make the pistachio cheesecake filling: Beat softened cream cheese with sugar until smooth. Gradually fold in whipped heavy cream and vanilla extract, then gently mix in finely chopped pistachios to distribute their crunch throughout the filling.
  3. Assemble the domes: Spoon the pistachio cheesecake filling over the prepared crusts in the molds, place a few fresh raspberries in the center of each dome, and cover with more filling to create a smooth dome shape with berries nestled inside.
