  • Lemon Juice – 1 teaspoon
  • Cornstarch – 1 tablespoon

Finishing Ingredients

  • Egg Wash – 1 egg beaten with 1 tablespoon water
  • Sanding Sugar (optional) – 1 tablespoon for topping

Instructions

  1. Prepare Your Ingredients: Preheat the oven to 375°F (190°C). Gather pie crust dough, cherry filling, sugar, lemon juice, and cornstarch. If using canned cherries, drain some syrup but retain enough for moisture.
  2. Make the Cherry Filling: In a bowl, mix cherry pie filling with sugar, lemon juice, and cornstarch. Stir thoroughly until the mixture thickens slightly, ensuring balanced sweetness and proper consistency.
  3. Roll Out and Cut the Dough: Lightly flour your work surface and roll out the pie crust dough to about 1/8 inch thickness. Use a round cutter to cut larger circles for the bases and slightly smaller circles for the tops of the pie bites.
  4. Assemble the Pie Bites: Place larger dough circles on a parchment-lined baking sheet. Spoon a small amount of cherry filling into the center of each base. Brush the edges with water, then cover with a smaller dough circle. Crimp edges gently to seal and cut a small slit on top for steam release.
  5. Brush With Egg Wash and Bake: Lightly brush each pie bite with egg wash for a golden finish. Optionally, sprinkle sanding sugar on top. Bake for 15–18 minutes until crust is golden and filling bubbles.
  6. Cool and Serve: Let the pie bites cool on a wire rack for at least 10 minutes before serving to set the filling and prevent burns. Serve warm or at room temperature.
