Scale

Main Ingredients

  • 1 firm head of green cabbage
  • 23 tablespoons olive oil, divided
  • Salt, to taste
  • Black pepper, to taste

Mustard Vinaigrette

  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • 3 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Cabbage: Remove the outer bruised or dirty leaves of the cabbage. Slice the head into 1-inch thick steaks, aiming for about 3 to 4 pieces depending on the cabbage size.
  2. Season the Cabbage Steaks: Lightly brush both sides of each cabbage steak with olive oil. Sprinkle salt and pepper evenly to enhance their natural flavors before roasting.
  3. Roast the Cabbage: Place the cabbage steaks in a single layer on a flat baking sheet. Roast in a preheated oven at 425°F (220°C) for 20-25 minutes, flipping the steaks halfway through, until the edges are crispy and caramelized.
  4. Make the Mustard Vinaigrette: While the cabbage roasts, whisk together Dijon mustard, apple cider vinegar, honey or maple syrup, minced garlic, olive oil, salt, and pepper in a small bowl until the mixture is smooth and emulsified.
  5. Dress and Serve: Once the cabbage steaks are golden and tender, drizzle the mustard vinaigrette over them while warm just before serving to preserve its bright and fresh flavor.

Notes

  • Cut cabbage steaks evenly about 1 inch thick to ensure even cooking without burning or undercooking.
  • Do not overcrowd the baking sheet to allow proper roasting and crisping instead of steaming.
  • Using a flat baking sheet helps even heat distribution and better caramelization.
  • Make the vinaigrette fresh just before serving for the best flavor balance.
  • Experiment with different mustard types such as whole grain or spicy brown for varied flavor profiles.
