For the Patties
- 1 lb ground beef (80/20 lean-to-fat ratio)
- 1/2 cup finely chopped onion
- 1/2 cup breadcrumbs
- 1 egg
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
For the Gravy
- 2 cups sliced fresh mushrooms
- 1/2 cup chopped onion
- 2 tablespoons butter or oil
- 2 tablespoons all-purpose flour (or gluten-free flour blend)
- 2 cups beef broth
- Salt and pepper to taste
- Optional: fresh thyme or parsley
- Prepare the Patties: In a large bowl, combine ground beef, finely chopped onions, breadcrumbs, egg, Worcestershire sauce, salt, and pepper. Gently mix until just combined to avoid tough meat. Form the mixture into oval-shaped patties, about 4-5 inches wide and 1 inch thick. Set aside.
- Brown the Patties: Heat butter or oil in a large skillet over medium-high heat. Add the patties and cook until browned on both sides, about 4-5 minutes per side. Remove patties and set aside, leaving the browned bits in the pan for extra flavor.
- Make the Gravy: In the same pan, sauté sliced mushrooms and chopped onions until tender and golden. Sprinkle flour over the vegetables, stirring well to absorb the fat and form a roux. Slowly pour in beef broth while whisking continuously to avoid lumps. Let the gravy thicken for 3-5 minutes while stirring. Season with salt, pepper, and optional herbs.
- Combine and Simmer: Return the patties to the skillet, nestling them into the gravy. Lower the heat, cover the pan, and let simmer for 10-15 minutes, allowing the flavors to meld and the patties to finish cooking through.
- Serve and Enjoy: Once the patties are cooked and the gravy is thick and rich, serve immediately over mashed potatoes, rice, or egg noodles for a satisfying meal.
Notes
- Don’t overmix the meat mixture to keep patties tender and juicy.
- Use fresh mushrooms for better texture and flavor in the gravy.
- Let patties rest a few minutes before cooking to help them hold their shape.
- Adjust gravy thickness by adding more broth if too thick or flour if too thin.
- Salisbury Steak freezes well; consider doubling the recipe for easy future meals.
